the prepared vegetable broth, TVP, tamari, and ketchup in a
medium bowl. Let the mixture stand until the liquid is
absorbed, or for about 10 minutes. Stir in all of the
left over ingredients and mix well.
In a 9x5 loaf pan or glass casserole dish, tightly pack the
mixture and put it in the oven for 40-45 minutes. Serve
with mushroom gravy and mashed potatoes to complete the vegan
recipe.
Children Choose “Chicken”
For a kid-friendly meal, “chicken” strips are a great
choice. How can you cook chicken strips without the main
ingredient—chicken? As usual, vegans have found a way to
make their own version of this popular dinner.
The ingredients needed for this recipe are: oakra from one
batch of soy milk, one 6 oz can of tomato paste, spices of your
choice ( suggestions include salt, garlic powder, sage,
cayenne, and black pepper), and 3 cups quick oats.
Preheat the oven to 350 degrees, and mix the okara, spices,
and tomato paste in a large bowl. Gradually, one cup at a
time, add the oatmeal to the mixture. Mix well (you might
need to use your hands), and then shape them into thin
strips. For a creative twist, let your kids mold the
dough into shapes of their choice. Finally, bake them for
30-45 minutes and enjoy!
